The enemy of a good sear is moisture. Before your fish even touches the pan, you must pat the skin side completely dry with paper towels. Any lingering water will create steam, leading to soggy skin rather than a crisp crunch.

  • Prep: Season the skin side with salt just before cooking.
  • The Sear: Heat oil in a heavy skillet over medium-high until shimmering. Place the salmon skin-side down. Press firmly with a spatula for 15 seconds to ensure even contact.
  • Wait: Cook undisturbed for 4–5 minutes. The fish is ready to flip only when the skin releases easily from the pan.
  • The Kiss: Flip and cook the flesh side for just 30–60 seconds to finish.
